Ayutthaya

In 400 years, Ayutthaya went from a prosperous trade and political capital to a completely destroyed city – plundered, burned and abandoned to ruin. The city was under a constant power struggle with neighbour Burma; nevertheless it remained a flourishing centre for regional trade and a burgeoning metropolis where art and culture merged.
With economic prosperity, Ayutthaya’s Kings poured the kingdom’s wealth into the religious monuments and construction of temples as well as the arts.
Exhibiting sophisticated techniques and styles, Ayutthaya’s architectural heritage is an amalgam of Lopburi, Dvaravati, Sukhothai, U-Thong, ancient Khmer and Persian styles. Now today, Ayutthaya’s temple and palace ruins serve as a powerful reminder of Siam’s glorious past as well as haunting memories of one of the darkest periods in Thai history.

Lao cuisine is unlike some others in the region, partially due to its location – it is landlocked and has no trading ports. The staple of traditional meal is sticky rice and its rolled into little balls and eaten with fingers – chopsticks are only for noodle dishes. A typical meal consist of sticky rice, jeow, spicy vegetable dipping sauces similar to salsa. But Laotian cuisine is influenced greatly from Thai and Vietnamese cuisine. Local markets are overflowing with chicken, duck, pork, fresh water fish, water buffalo and goat. They also cook with a number of ingredients such as pea eggplants – tiny, bright green eggplants the size of blueberries that grow on branches. They use lots of herbs and try to balance the flavors of their dishes with bitter, salty, sour and spicy things.

Kdam chaa: fried crab

Fried crab is a special dish of the Cambodian seaside town of Kep. Its lively crab market is known for fried crab prepared with green and locally grown Kampot pepper. Aromatic Kampot pepper is very famous among gourmands worldwide, although it is available in its dried form internationally, tourists will only be able to sample the specially flavored immature green peppercorns in Cambodia. It’s worth to have a visit to Kep and Kampot, but Phnom Penh restaurants bring live crabs from the coast to make their own version of this dish, which includes both Kampot pepper and flavorful garlic chives.

Nom banh chok, a favorite Cambodian dish, so that in English it’s called simply “Khmer noodles.”
Nom banh chok is a typical breakfast dish and you will find it sold in mornings by women carrying it on baskets hanging from a balance on their shoulders.
The dish consists of noodles laboriously pounded out of rice, a fish-based green curry gravy made from lemongrass, turmeric root and special kaffir lime.

Dressed with lemongrass, shallots, garlic, Asian basil, fish sauce, mint, green beans, green pepper, the dish also packs a punch in the heul (spicy) department with copious amounts of fresh red chilis.
A refreshing dish that is more beef than salad, Lap Khmer is common with Cambodian men who prefer beef to be nearly fresh, but at restaurants it’s generally served grilled.

Khmer red curry

Less spicy than the curries of neighbor Thailand, Khmer red curry is similarly coconut milk based but without the overpowering chilli.
The dish includes beef, chicken or fish, eggplant, potatoes, green beans, fresh coconut milk, lemongrass and kroeung.

Khmer red curry is usually served at special occasions in Cambodia as weddings, family gatherings and religious holidays like Pchum Ben or Ancestor’s Day where Cambodian people make the dish to share with monks in honor of the departed. Khmer red curry is usually served with bread – a remnant of French culture influence on Cambodia.

Fish amok

Fish amok is one of the most well-known Cambodian dishes, but you can find similar dishes in neighboring countries.

The addition of slok ngor – a local herb which imparts a subtly bitter flavor, separates the Cambodian version from the pack.

Fish amok is a fish mousse with fresh coconut milk and kroeung (a type of Khmer curry paste which is made from lemongrass, turmeric root, garlic, galangal, shallots and fingerroot or Chinese ginger).
At upscale restaurants fish amok is steamed in banana leaf, while more local sites serve a boiled version that is more like a soupy fish curry than a mousse.

Laos cuisine is the most important activity throughout the day. Cuisine is often the topic of many conversations, especially when eating and sharing dishes between your friends and family. In addition, Laos people take great passion in sharing traditional dishes with curious travelers. Do not leave Laos without taste them in your Laos traveling.

Laos Sausage (Sai Oua)

Laos Sausage is not so different to the famous Chiang Mai Sausage next door in Thailand (Lanna Food). A meat treat which fuses the regions signature flavors with sours of lemongrass and the kaffir lime and the fiery kicks of chillies and galangal fused together with minced pork and pressed into skins. Laos Sausages are often seen drying at roadsides or strung up at local markets. Unlike the Sai Oua of Lanna Thailand food, the Laos Sausage comes served with a tasty dry chilli dip (Nam Cheo) and of course sticky rice.

Laos Beef Jerky (Sien Savanh)

Laos equivalent to beef Jerky. Not overly exciting but Sien Savanh do make great for nibbling on traveling and are often found at bus stations or pit stops along the way. Sien Savanh are small bites of beef, marinated in dark soy, oyster sauce, pepper, , garlic and palm sugar. Occasionally with sprinkles of sesame seeds. The marinated beef is left to dry in the sun to find the perfect glaze. A quick grilling at roadside street food sellers adds a smoky flavor and the result is a chewy, sticky, bubbletastic beef snack. Sien Savanh come hand-in-hand with a bag of sticky rice and if lucky a spicy tomato chilli dip (Jaew Mak Len).

Green Papaya Salad (Tam Mak Hoong)

The casual observer might dismiss Tam mak hoong as being the papaya salad seen everywhere in Thailand, or the milder versions eaten in Vietnam or Cambodia. Actually, there’s a bit of controversy as to whether the papaya salad originated in Isaan, in northeastern Thailand or Laos. It is quite same to Nom Vietnam. With salad it is always a fresh dish. I love all of salad dishes.

Minced Pork Salad (Laab Moo)

While famous in Thailand’s Isaan region this fiery, minced pork salad originates from Laos. Easily it becomes one of my favourite foods in Asia and a must try for any visitor to Laos (or Isaan). While Laab moo doesn’t have variations the most popular dish comes with stir-fried minced pork cooked with shallots, chillies, coriander and mint leaves. Salty of fish sauce and sour of lime for seasoning. Laab can be found using raw uncooked meat which I advise against eating strongly. As most of Lao food Laab comes served with sticky rice( Khao Niew) an accompanying staple.

Lao Noodle Soup (Khao Piak Sen)

This top-notch noodle dish is probably the most common of Lao food and it is a staple not so different to Pho which is synonymous with their Vietnamese neighbours. While popular as breakfast Khao Piak Sen is also good for lunch and pretty much anytime of the day. This tasty soup generally comes as Pork belly or Chicken served in like broth over flat rice noodles and flavourings of fresh herbs. Laos noodle soup is often accompanied by optional garnish of chilli oil, lime juice, bean sprouts, long beans, holy basil and cilantro.

Klao niaw (Sticky rice)

The foundation of all Laos meals, most Laos people prefer sticky rice to regular steamed white rice. In fact that they eat on average 345 pounds of it per person annually, more than any other country. Because sticky rice takes longer to digest than regular white rice, therefor people can go longer without eating, important in an agrarian society like Laos. Expect to see a small woven basket of it at every meal. The rice is rolled by hand into small balls, dipped into food, sauces like jeow, a dry, non-oily chili paste with a bit of buffalo skin mixed in, and eaten with the fingers.
