Vietnam traditional food is greatly admired about fresh ingredients, minimal use of dairy and oil and reliance on herbs and vegetables. With the balance of yin – yang between fresh herbs and meats and a selective use of spices to reach a fine taste, Vietnamese food is seem one of the healthiest cuisines worldwide.

Bún Chả is a Hanoi specialty, tourist can find bun cha at food stalls or street kitchens. It is perfect in Hanoi.

Essentially the pork patties are barbecued on an open charcoal brazier and served with Bún( a kind of Vietnamese noodle) assorted fresh vegetables and a slightly sweet sauce.
Pho
Phở is Vietnam’s national dish a the country’s great staple is pho, a noodle soup eaten at any time of day but primarily at breakfast.

The basic bowl of pho consists of a light broth, to which are added broad, banh pho (flat rice noodles), spring onions and slivers of chicken, pork or beef. Noodle soup is not unique in Vietnam. Laos also has noodle soup. It is Khao piak sen – Laos noodle soup.
Cao Lau
Central Vietnam does Cao Lau best. Among Hoi An’s tasty specialties is Cao Lau, a mouthwatering bowlful of thick rice-flour noodles.

It is served with green bean sprouts, herbs and pork-rind croutons in a light soup which has flavour of mint and star anise, topped with thin slices of pork and served with grilled rice-flour crackers or sprinkled with crispy rice paper.
Cha ca La Vong
Seafood dishes are among the highlight dishes of Vietnamese cuisine. Chả Cá Lã Vọng, reportedly devised in Hanoi, is perhaps the best known. Fish meat is saute in the oil with very much dill and spring onions, then served with Bún(cylinder rice noodles) and a scattering of peanuts. Goi cuon
Gỏi Cuốn is one of the most famous Vietnamese dishes: translucent spring rolls packed with fresh vegetable, coriander and various combinations of minced pork, shrimp.

In some places they’re served with lettuce and/or mint. A southern variation has barbecued strips of pork wrapped up with green banana and star fruit then dunked in a rich peanut sauce. Goi cuon is so fresh that you can try in everyseason.
Nom
Nộm or salad Vietnam is very popular in all regions of Vietnam. Because Vietnam is a tropical country, Nôm is so fresh. there are many kinds of this dish and there are differences between regions of Vietnam.

Nom dishes such as: nộm hoa chuối (banana flower salad), nộm đu đủ (papaya), nộm su hào (kohlrabi salad), nộm xoài (mango salad)…Nộm is always mixed with various herbs. It is crispy and light sweet and sour.

Bánh Mỳ Vietnam is the best thing for breakfast. It exist throughout Vietnam. But It is the most famous in Hoi An.

Bánh Xèo contains shrimp, pork, bean sprouts and egg, which is then fried, wrapped in rice paper with fresh vegetable and dunked in a spicy sauce before eaten.
Nem ran/Cha gio
Vietnam spring rolls often appear in the Tet feast. Vietnam spring rolls are usually more impressed with foreigners.

The crispy shell with a soft veggie and meat filling dunked in sauce gets the gastronomic juices flowing before a main course. In the north of Vietnam these parcels go by the name “nem ran” while southerners call them “cha gio”.
